How to prepare a cake pan


If you like to bake and decorate cakes, then you know the importance of baking flat cakes.  Sure, you can cut the bumpy part out, but that’s a waste of delicious cake. So here are few tips to get your cake level and flat:

1)   Use the Wilton baking strip/band, you have to moisten the band and wrap around the cake pan. What the band does it to distribute the heat evenly and the cake bakes fully while keeping the flat shape.

2)   Don’t grease the sides of the pan, I’ve learned this trick attending SFBI Wedding class and have tried it many times. What happens is when the cake rises, because there is no grease, the cake sticks to the sides of the pan and waits until the center of the cake reaches to the same level, therefore the cake comes out flat.

 Just spray the bottom of the pan, and cover with a parchment paper, then pour the batter and bake. To release the baked cake, let it cool upside down on a wire rack, once cooled use a thin spatula to release the side.
