Persian Walnut Cookies

We have less than 20 days to Nowruz and I’ve been working long days and nights to ensure a smooth holiday season for us at the bakery and for all YOU, my wonderful friends.

As busy I am, I can’t stop helping myself and wanted to share the recipe for this walnut cookies with you. They’re my new favorite and I know you will love them too. They’re crunchy, buttery, and so fragrant. I do have to warn you, these cookies are so addictive, once you have one, it’s hard to stop ;)

Key points: The ratio of butter to other ingredients in the recipe is high, that’s why working with the dough isn’t as easy as other doughs, you have to keep the dough in the fridge for 2-3 hours. Also, it’s important not to knead the dough as your hand temperature will melt the butter and the dough becomes very difficult to work with. Divide the dough into two portions and keep them refrigerated.

Also it’s really important to bake the cookies frozen, meaning after you have one tray ready, keep it in the freezer for 10 minutes then bake.

Persian Walnut Cookies

Yield: 12 dozens + Bake time: 10-15 minutes

Ingredients:

  • 2/3 cup (150g) butter, softened

  • 1/3 cup (35g) powdered sugar

  • 1 tsp vanilla extract

  • 1 tsp cardamom, ground

  • 1 1/2 cup (180g) all purpose flour

  • 1/2 cup (60g) walnuts, chopped fine

Process:

  1. Cream the butter and sugar together until smooth. Stir in the vanilla and cardamom.

  2. Stir the flour and walnuts together and add to the creamed butter mixture, blend well. Cover with plastic wrap and chill for 30 minutes.

  3. Pre-heat the oven to 325°F . Have two baking sheets covered with parchment paper.

  4. Cut the dough in half, place one half in the refrigerate . Dust your work surface with flour and roll out the dough to half an inch and use your favorite cookie cutter & place the cookies on the baking tray covered with parchment paper. Avoid kneading the dough and if the dough gets very soft, place in the fridge until firms.

  5. Once done with the first tray, place the tray in the freezer for 10 minutes, then place in the oven and bake for 10-15 minutes or until it’s golden brown.

  6. Remove from the oven, dust with powdered sugar while the cookies are warm.

  7. Let the cookies cool and serve in your favorite dish and decorate with some pistachios and rose petals.
