Mascarpone Cheesecake with berry sauce
If I ask you what is your absolute favorite dessert, what would you say? Tarts, Cakes, Cupcakes, cheesecake??? I know mine without a doubt is cheesecake. Cheesecakes are like tarts so versatile with endless possibilities and flavors. I love making them, they're super easy and they're crowd pleaser. I know only one person that doesn't like cheesecake...what's not to love? They're cool, creamy, and can be made in flavors to suit any gatherings and any season.
I remember my first attempt at making cheesecake was not so easy and pretty....I beat the batter for too long and bake the cheesecake with high temperature and the result was a cracked open cheesecake...it tasted good, but not so pretty.
These days I'm much better at baking them, but I also love the no-bake cheesecakes. They are perfect for this hot weather just a few hours in the refrigerator and they're done.
I used chocolate cake that I had already baked, but if you have no cake at home, don't worry use Graham cracker and mix with melted butter to add moisture. For the berry sauce I added a little rum to enhance the flavor of berries. I think you will love it, it needs very little preparation and of course no baking. You just need to make the berry sauce which can be made ahead of time. So lets get to the recipe..hope you like it!
Mascarpone Cheesecake with Berry Sauce
No-Bake mascarpone cheesecake with berry sauce is a delightful bite of creamy mascarpone with a hint of rum and taste of berry sauce; an absolute must have in the summer
- 8 ounces Mascarpone; room temperature
- 3/4 cup whipping cream
- 1/4 cup sugar
- 1 tsp vanilla extract
- Zest of one lemon
- 1 cup homemade berry sauce
- 3-4 slices of sponge cake cut in small cubes; you can use any other simple cake that you might have at home, I used chocolate cake.
In a medium bowl and with your electric mixer, beat the mascarpone until smooth, add heavy cream, sugar, lemon zest and vanilla and beat to medium-stiff peaks.
Spoon or pipe a layer of the mascarpone mix into the bottom of your glasses/dishes then add a layer of the cake, followed by a layer of berry sauce. Repeat layering. Place in the refrigerator for 3 hours before serving
