Gluten-Free Banana Bread

We, Iranian, use many gluten-free flours in baking for example chickpea flour, rice flour, and coconut flour, but none that I could use to replace with all-purpose flour cup by cup. So, I've been on the search to find a recipe to make gluten-free flour mix to use/substitute for all purpose flour.

Finally, I found a recipe that seemed to do the trick, today I put the gluten-free flour mix to test and made gluten-free banana bread.  And the result was amazing and I'm so excited to share this recipe with you.

 Banana bread is one of my favorite afternoon snack or morning breakfast. It's filled with walnuts, orange zest, pineapples, and of course bananas. Like most of my recipes is low in sugar and scented with cinnamon, nutmeg, ginger, and a little cardamom. Give it a try and let me know how you like it. If you want to bake this recipe with all purpose flour, just simply replace the gluten-free flour mix with all purpose flour cup by cup.

Gluten-Free Banana Bread

Yield: 9x5 inch loaf              Bake time: 55 minutes


  • 5 over-ripped bananas or roasted bananas, 1 1/2 cup
  • 2 cups gluten-free flour mix
  • 1 1/2 teaspoon gluten free baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/8 teaspoon ginger
  • 2 eggs, lightly beaten
  • 1 cup sugar
  • 1/2 vegetable oil
  • 1/2 cup chopped walnuts


  1. Preheat the oven to 350°F/175°C . Spray a 9x5" loaf pan and set aside
  2. If your bananas are not over-ripped, line a baking sheet with foil, prick banana peels with a fork and bake for 15 minutes, the peels will turn dark brown. Cool in the pan and use.
  3. In a large bowl combine the gluten-free flour mix, baking powder, baking soda, cinnamon, salt, nutmeg, and ginger. Set aside
  4. In a medium bowl combine eggs, sugar, and oil. Add 1 1/2 cup smashed bananas & stir. Add this mixture to the flour mix all at once and mix until the flour is moisten, fold in walnuts and spoon the batter into the prepared loaf pan.
  5. Bake for 55 to 60 minutes or until a toothpick inserted in the center comes out clean.
