Bailey's White Chocolate Cupcake
As we're getting closer to the holiday season, I wanted to get a jump start on creating a list of desserts for your holiday gatherings! These are specially good for adult cup-cake lovers out there. They are moist with a great aroma of Bailey's Irish Cream and are wonderful with a cup of coffee. *Remember to keep them out of reach of children :)
All baked and ready for Bailey's Frosting.
Ingredients:
- 3/4 cup miniature chocolate chips
- 2 3/4 cups flour
- 1 cup sugar
- 3 large eggs
- 1 teaspoon Baking powder
- 1 teaspoon Baking soda
- 1/2 teaspoon salt
- 3/4 cup cream cheese *room temperature
- 10 tablespoon butter
- 3/4 cup Bailey's Irish Cream Liqueur
- 2 teaspoons Vanilla
Process:
- Preheat oven to 350 degrees & line the cupcake tray with the cupcake paper
- Use 1 tablespoon of the flour and toss together with the white chocolate; set aside * mixing chocolate with flour prevents chocolate from sinking to the bottom of the cake!
- Sift together dry ingredients (Flour, baking powder and salt); set aside
- Cream together cream cheese and butter for about 2 minutes
- Add sugar and vanilla beat until the batter is smooth and creamy
- Add eggs one at a time and mix well
- Add the dry ingredient and liqueur alternately
- Remove from the stand & gently stir in the chocolate
- Spoon the batter into cupcake tray, filling each one almost to the top
- Bake the cupcakes for 18-20 minutes or until a toothpick inserted comes out clean
Frosting
Ingredients:
- 1 cup butter (2 sticks)
- 3 cups powdered sugar
- 4 tablespoons Bailey's Irish cream
- 2 tablespoons Vanilla
Process:
- Place all the ingredient in a large mixing bowl & use electric mixer
- Mix the ingredient until you have a smooth and creamy frosting
- Using Wilton Tip 12 decorate the cupcake
