Tuile Baskets with Berry Cream

Summer days are fast approaching & it's time to gather with friends and families!  This easy & simple dessert will only take 30 minutes to make, but it will add beauty to your table, and above all will impress everyone ;)  So here is what you need:For the basket: 

  • 2 egg whites
  • 1/2 cup sugar
  • 1/4 cup butter, melted 
  • 2 teaspoon vanilla
  • 1/2 cup flour

For the Berry cream:

  • 1 cup heavy cream 
  • 2 tablespoon of confectioners' sugar
  • 2 tablespoon fresh mint * optional, I didn't have any at home and it was still delicious
  • 1 1/2 cup strawberries/raspberries (sliced or cut into small pieces)

How to make the baskets?

  • Heat up the oven to 375 degree and cover a baking tray with parchment paper
  • Put the egg whites in a bowl and mix using a whisk 
  • Stir in the sugar, then the butter and vanilla
  • Stir in the flour and keep mixing until you have a smooth creamy batter
  • Drop 1 tablespoon of the mixture onto the tray and drop a second spoonful well apart from the first, then spread both into a thin circle about 5-7 inches in diameter* note that you can make these baskets smaller if you wish too
  • Bake in your preheated oven for 5-6 minutes* this process will be faster if you have two baking sheets ready, so you can repeat the same action to bake more baskets. 
  • Once the sides of the baskets are golden color ( as you see in the picture) remove from oven and very carefully drape over a medium size orange and  pinch the edges into pleats and allow to harden for 2-3 minutes, then carefully ease off the orange. Repeat until 6 baskets have been made. 

How to make the cream?

  • Using a handheld mixer, whip the cream until it's stiff, fold in the sugar and beat until it's well mixed 
  • Using a spoon add berries to the mix
  • Spoon into the tuiles and then top with whole strawberry or raspberry for decoration.
  • Dust with sifted confectioners' sugar
