Raspberry Champagne Cupcakes

It's hard to believe that January is coming to an end.  Has the year started out right for you? Are you still on track with your weight loss? Did you organize that desk drawer or the closet space that you said you were gonna do? isn't it easy to get busy with life and forget about all the things that we said we're gonna do at the beginning of the year??

As for now...we're getting ready to celebrate the Valentine's Day!! And whether You celebrate it or not; there is nothing wrong with baking some yummy cupcakes and enjoy them with a glass of Champagne :)

What do you need?

  • 1 1/2 cup flour
  • 2 eggs
  • 1/2 cup butter
  • 3/4 cup sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoon vanilla
  • 6-tablespoon buttermilk
  • 8-tablespoon Champagne (you can use any Champagne, but I used Asti Champagne from      Trader Joe's reasonable in price & wonderful to bake with)
  • 1 teaspoon of red coloring
  • 1 teaspoon of raspberry extract

How to do it?

  • Preheat oven to 325
  • Line mini cupcake cups ( makes about 24 mini cupcakes OR 12 large ones)
  • In a small bowl, whisk together flour, baking powder, baking soda and salt, set aside
  • In a mixing bowl, beat together butter and sugar, add eggs one at a time, beating well after each addition
  • Stir in buttermilk and champagne
  • Gradually add flour mixture, mixing just until lump free, don't over mix
  • Slowly add strawberries and mix with a spatula
  • Using an ice cream spoon fill the cupcake tray (leave room for cupcakes to rise)
  • Bake for 10-12 minutes or until you insert a toothpick and it comes out clean
  • Let cool on the baking rack for 10 minutes before decorating
  • Decorate with cream cheese frosting
