Pistachio Orange Blossom Cake 

Hard to believe that half of the year is already gone and summer is here!!! It seems like it was just couple weeks ago that I talked about making New Years' resolutions and staying on track with eating healthy and having a balance in life.

It has been a wonderful year for me, full of learning and a deep appreciation of life and people around me !! I had never appreciated life as much as I've in the past year! I do more of what I'm passionate about (my baking) and less of worrying about the future!! I strongly recommend it :)

Today I baked a pistachio cake with orange blossom flavor.  A delicious cake that is great for any occasions and one of my favorite; it's scented with orange blossom and spiced with cardamom.

What do you need? 3 Eggs 1/2 cup Butter (1 stick) 1 cup Flour 1 cup unsalted Pistachio 1/2 cup Graham Cracker Crumbs 1 cup Sugar 1/2 cup Milk 1/4 cup Orange blossom water 1 teaspoon Cardamom 1 teaspoon Vanilla 2 teaspoon Baking Powder 2 teaspoon Orange Zest

How do you do it?  Heat up oven to 325 degree Spray a 9" cake pan Melt butter in the microwave for 5 seconds and mix in with sugar (using the mixer on medium speed for 5 minutes Using a food processor, crush the pistachio Add eggs one at a time and beat well after each addition Add vanilla, cardamom, & orange zest while mixing the batter Add baking powder to the flour Slowly add milk, orange blossom water and flour & graham cracker crumbs Pour the batter into the pan and place on the medium rack of your oven Bake for 40 minutes or until you insert a toothpick in the middle of the cake and it comes out clean

I decorated the cake with flowers that I had made from gumpaste in my cake decorating class.
