Pink Grapefruit Dessert

Summer is officially here in Los Angeles :( but what is exciting is baking/creating summer desserts. These days I'm so busy at work that I don't have time to go shopping, so I just go with what I have in my fridge!! And a dessert can't get any better & refreshing than Pink Grapefruit Cream; it's sweet, tangy, creamy and Darmbuie adds a very unique flavor; making it utterly delicious!  Enjoy :)

get all the white membrane off 

What you need? (these ingredients make enough desserts for three people)

  • 1 large pink grapefruit
  • 1 cup heavy whipping cream
  • 3/4 cup plain yogurt
  • 5 tablespoons brown sugar
  • 1 teaspoon vanilla
  • 3 tablespoons Drambuie ( An aged Scotch Whisky crafted with herbs, spices and honey)
  • 1 1/2 teaspoons cinnamon

How do you make it?

fold in the yogurt, cinnamon, grapefruit zest

    • Grate the zest of the grapefruit
    • Peel the grapefruit and make sure that you get all the white membrane off and remove the segments.
    • Place the grapefruit in a bowl and sprinkle with two tablespoons of the sugar; now add Vanilla and 2 tablespoons Drambuie to the mix and set aside
    • Beat the cream in a large bowl ( for the best result, place a stainless steal bowl in the freezer for 5-10 minutes prior to beating the cream)
    • Fold in the yogurt, cinnamon, grapefruit zest and the remaining sugar and mix in until smooth
    • Spoon the mixture into attractive glasses, arranging the grapefruits between layers of cream
    • Sprinkle the top with a little extra brown sugar and cinnamon

Spoon the mixture into attractive glasses

  • Place in the refrigerator for 15 minutes and serve
