Dazzling Chocolate Raspberry Cake

Yields: 2 x 6" cakes                                    Bake time: 1 hr

Ingredients:

  • 2 eggs
  • 1 cup butter or two butter sticks
  • 2 cups sugar 
  • 3 cups flour 
  • 1 cup milk
  • 1 cup water
  • 3/4 cup cocoa powder
  • 2 teaspoons baking powder
  • 2 teaspoons Vanilla 

Ingredients for Filling:

  • 227g cream cheese
  • 1/3 cup sugar
  • 1 cup chocolate chips 
  • 2 teaspoon vanilla
  • 1 1/2 cups raspberries

Process:

  1. Preheat oven to 350 degrees. Grease the cake pan
  2. Cream together cream cheese with sugar & vanilla, mix in chocolate chips and set aside
  3. Sift together the flour, cocoa, baking powder and salt 
  4. Beat the eggs for few seconds, add the sugar until the mixture is thick and pale
  5. Beat in the melted butter then the milk, water and vanilla
  6. Gradually add flour 
  7. Spread half of the batter into the pan, drop spoons of the cream cheese filling evenly over the batter & sprinkle raspberries over the top then cover with the remaining the batter
  8. Bake at 350 degree for 1 hour (the middle of cake will be soft because of cream cheese, but it's OK) 
  9. Decorate with fresh raspberry,strawberry or any kind of berries that you have & powder sugar
