Bailey's White Chocolate Cupcake 

As we're getting closer to the holiday season, I wanted to get a jump start on creating a list of desserts for your holiday gatherings! These are specially good for adult cup-cake lovers out there. They are moist with a great aroma of Bailey's Irish Cream and are wonderful with a cup of coffee. *Remember to keep them out of reach of children :) 

All baked and ready for Bailey's Frosting.

Ingredients:

  • 3/4 cup miniature chocolate chips
  • 2 3/4 cups flour
  • 1 cup sugar
  • 3 large eggs
  • 1 teaspoon Baking powder
  • 1 teaspoon Baking soda
  • 1/2 teaspoon salt
  • 3/4 cup cream cheese *room temperature
  • 10 tablespoon butter
  • 3/4 cup Bailey's Irish Cream Liqueur
  • 2 teaspoons Vanilla

Process:

  1. Preheat oven to 350 degrees & line the cupcake tray with the cupcake paper
  2. Use 1 tablespoon of the flour and toss together with the white chocolate; set aside * mixing chocolate with flour prevents chocolate from sinking to the bottom of the cake!
  3. Sift together dry ingredients (Flour, baking powder and salt); set aside
  4. Cream together cream cheese and butter for about 2 minutes
  5. Add sugar and vanilla beat until the batter is smooth and creamy
  6. Add eggs one at a time and mix well
  7. Add the dry ingredient and liqueur alternately
  8. Remove from the stand & gently stir in the chocolate
  9. Spoon the batter into cupcake tray, filling each one almost to the top
  10. Bake the cupcakes for 18-20 minutes or until a toothpick inserted comes out clean

Frosting

Ingredients:

  • 1 cup butter (2 sticks)
  • 3 cups powdered sugar
  • 4 tablespoons Bailey's Irish cream
  • 2 tablespoons Vanilla 

Process:

  1. Place all the ingredient in a large mixing bowl & use electric mixer
  2. Mix the ingredient until you have a smooth and creamy frosting
  3. Using Wilton Tip 12 decorate the cupcake
